i cooked this 6 times in 4 weeks— make a batch on sunday for easy lunches throughout the week! 🥘🤎
Ingredients
1 tbsp. extra-virgin olive oil
1 red onion, finely chopped
1 1/2 lb. ground turkey
Kosher salt
Freshly ground black pepper
4 cloves garlic, minced
2 tbsp. tomato paste
1 packet taco seasoning of choice
1 (28-oz.) can chopped tomatoes (sometimes I use fire roasted, sometimes just regular!)
1 (15-oz.) can black beans, rinsed and drained
1 (15-oz.) can kidney beans, rinsed and drained
1 1/2 c. chicken or beef broth
Shredded cheese, for garnish (I use a goat’s milk cheddar)
Thinly sliced green onions, for garnish
Sour cream or yogurt
Optional: roasted butternut squash or sweet potato (absolutely not necessary but I was meal prepping for the week and already had it on hand!)
