Cozy Dinner Series - Part 1! 🍲 The ber months mean it’s chili season in our house! 🥣✨this is my favorite recipe! It can be made with any meat, but this time we chose to go with smoked chuck roast! This is an adaptation of my dad’s chili recipe that I’ve adapted to fit our household! I’ve been making it for 15 years now and it hits the spot every time!
Chili
1 sweet onion (I also added 3 cloves garlic - optional)
3 bell peppers
4 cups (+/-) of your favorite meat (cooked) - I used smoked chuck roast, but I’ve used ground beef, ground turkey, roast chicken and even brisket.
¼ cup chili seasoning (homemade or store bought)
2 cups of diced tomatoes
2 cups of your favorite beans - pinto, navy, kidney, whatever
4 cups (+/-) stock - add to desired consistency
Feel free to add more veggies. We’ve done celery, carrots, mushrooms, green beans, etc. use what you have on hand!
Salt & pepper to taste.
Your favorite oil - olive, bacon grease, avocado, whatever you want.
