Next time you’re smoking a brisket, save all those fat trimmings and make your own smoked tallow. Remove any meat and cut the fat into smaller pieces. Throw them in a foil pan, add some water and smoke it next to your brisket. And usually by the time the brisket is ready to be wrapped, the fat is rendered and good to go. Strain it and you have your own smoked beef tallow. Use it in place of regular oil for a boost of flavor. It will be smokey, beefy and delicious!
