Here are my tips and tricks to hopefully set you up for success the next time you make spring rolls! 1. Rice Paper: The Three Ladies brand is my go to because I feel like they have more structural integrity. I will say most of the rice paper brands you will find at an ASIAN grocery store should have similar if not the same structural integrity though! 2. Banh Hoi: These are woven vermicelli. I don’t have a brand preference. I just happened to have Three Ladies brand also. I like using these because even after cooking they stay in a nice bundle. It makes it easier for guests to grab noodles and in my opinion it is cleanlier since you don’t need to fight to separate bunches of noodles. I also like how easy and quick they are to prepare! 3. Thinly slicing your ingredients: I’ve always found it makes rolling easier if you prepare firmer ingredients thinly or into matchsticks. I even slice the protein thinly (ex.
