The secret to great focaccia? Olive oil, salt, and a little smoke from the Egg.
Here's how to make
@tinacannoncooks' Famous Focaccia:
Makes 2 (10-inch rounds)
Dough
- 4 cups AP flour
- 2 tsp kosher salt
- 1 packet instant yeast
- 2 cups warm water
- 4 Tbsp olive oil
Mix flour, salt, yeast. Add water, stir until no dry flour. Drizzle with 1 Tbsp oil, cover, refrigerate 8–24 hrs.
Remove, divide in half, place in oiled bowls, cover. Heat Egg with pizza stone to 400–450°F.
Shape dough on oiled parchment, 1” thick. Dimple with fingertips, top with Parmesan + Calabrian chilies.
Bake ~10 min until golden. Top with more Parmesan + drizzle hot honey.
Optional toppings: olives, rosemary, pine nuts, sun-dried tomatoes.
