A properly cooked skirt steak is one of my favorites. Here are my 5 tips for making it perfect: 1. Remove any silver skin still attached and cut the steak into smaller sections. Makes it easier to handle and cook. 2. Skirt steak is perfect for marinades. The meat will soak up all that flavor. And it doesn’t have to be complicated. I like the following mix: - ¼ cup soy sauce - ½ cup olive oil - Juice from 2 limes - Zest from 1 lime - ¼ cup honey - 1 tbsp minced garlic - 1 tbsp steak seasoning 3. When it comes to cooking, grilled over charcoal is the best way. Get you grill hot, drop the skirt steak directly over the coals, flip every 30-45 minutes and pull it off at 120 internal for medium rare. Total cook time is 4-5 minutes. 4. REST for 5-10 minutes. 5. Probably the most important tip is how you cut the skirt steak. I like to cut it with the grain into big sections, ROTATE, and now cut across the grain.
