This is your holiday dinner showstopper. Smoked rotisserie prime rib made on the @webergrills Searwood. I like to french the prime rib, it makes for a much nicer final presentation. Skewer it on the rotisserie and cover the whole thing in a mix of butter, rosemary and steak seasoning. Set the temp to 250 degrees and spin the prime rib over the potatoes until it hits 115 internal. As the prime rib cooks and that fat renders out, the potatoes will get hit with all that delicious flavor. Remove everything from the grill, let it rest a good 30 minutes, slice and enjoy!
