For the sauce: - ¼ cup mayo - ¼ cup sour cream - Zest from 1 lime - Juice from 1 lime - 1-2 chipotle peppers in adobo sauce + sauce (the more you add the spicier it will be) - 1 tbsp my taco seasoning - Salt to taste Cut the corn from the cobb, add a handful of chopped green onions, cilantro and cotija cheese.
