Kimchi Double Egg Salad Sandwich 🥚
Ingredients: (Yields 4 sandwiches)
10 BurnbraeFarms Naturegg Omega Plus Eggs
1/2 cup Japanese mayo
1/4 cup kimchi (chopped)
1 lemon wedge
1 tsp mustard
1 tsp sugar
1 tsp salt
1 tsp black pepper
Cooking Instructions:
1. Put all the eggs in a pot of boiling water, taking 4 out after 6 minutes and the last 6 after 10 minutes. Place eggs in an ice water bath.
2. Peel the first 4 eggs and put them to the side. Peel the other 6 eggs, dice and put into a bowl.
3. To that same bowl, add in Japanese mayo, kimchi, mustard, lemon, sugar, salt, pepper. Mix together.
4. On one piece of bread, add a layer of egg salad. Add one soft-boiled egg to the middle. Top it off with more egg salad and another slice of bread.
5. Wrap together with parchment paper then slice in half. Enjoy!
