A fall staple I look forward to making every year! If you love Trader Joe’s frozen butternut squash mac and cheese you absolutely must make this version. You can make butternut squash puree from scratch or buy it canned. It also works with canned pumpkin purée! 💛
Ingredients:
16 oz pasta, I used rigatoni
3 tablespoons butter
1 1/2 tablespoons all purpose flour
2 cups milk
1 tablespoon fresh sage, minced
1 tablespoon fresh thyme, minced
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1/8 teaspoon chili flakes or cayenne pepper
1/2 cup butternut squash purée (I made my own by blending roasted butternut squash or you can use canned. Pumpkin puree works too!)
2 cups shredded cheddar cheese, I used Trader Joe’s unexpected cheddar
2 cups shredded Gouda, or you can sub with just more cheddar if you’d like
2 tablespoons grated Parmesan + more to top
