Just got back from my retreat, and leave this weekend to teach classes in the Midwest, so safe to say with all the work in between i need a SIMPLE (yet yummy) dinner to get in all my veggies!!! This sweet potato fajita bowl was just that. And if you know me, you knowwww im a sauce girl. I have to have sauce with any bowl, and my favorite way to make a healthy sauce is always watering down some Greek yogurt with some seasoning!!! This time the seasoning was hot sauce, garlic powder, lime, salt and chili powder. It makes the perfect spicy crema yet adds some good protein:)
