Microwave Gyeranjjim (Korean Steamed Egg)
Makes 1 serve: 551 calories (27c 19f 68p)
INGREDIENTS:
100g enoki mushroom
300g silken tofu (we used
evergreenfoods.au regular tofu)
1.5g MSG salt (or normal salt
2 eggs
5g tuna extract (or fish sauce)
10g soy sauce
10g mirin
100mL boiling water
150g raw shrimp
5g sesame oil
Optional garnish: sesame seeds and chopped green onions
Optional:
Zucchini for more volume
Oats or rice for more carbs (I used 45g of oats)
1. Chop enoki mushrooms into small pieces. In a microwave safe bowl, combine and mix the enoki mushrooms tofu, and MSG salt.
2. In a separate bowl, whisk and combine 2 eggs, tuna extract, soy sauce and mirin. Then add the boiling water and continue whisking a bit more.
3. Pour the egg mixture on top of your tofu mix. Then cover with glad wrap and microwave for 3 minutes.
4. After 3 minutes, add your raw shrimp on top and microwave for another 3 minutes.
