Soup on Sunday: Creamy Tomato Basil Soup 🍅🌿 The tomato basil soup from @Café Zupas is my ALL TIME favorite and I’ve been trying to find a recipe for years that comes remotely close. I slightly altered @Chef Kelly Scott recipe and it’s the closest I’ve found!! It’s SO GOOD and beyond easy! INGREDIENTS: • olive oil • 1 onion, diced • 2 celery ribs, diced • 2 carrots, diced • whole head of garlic, roasted • 1 tsp dried thyme • 3 tbsp tomato paste • 1, 28 oz can San Marzano whole peeled tomatoes • 1/2 cup chicken stock salt and pepper • 4 basil leaves, chiffonade • 1 cup heavy cream INSTRUCTIONS: • Chop the top off of an entire head of garlic, drizzle with olive oil, wrap in tin foil, and bake at 400°F for 45 minutes • In a large pot over medium heat, add olive oil and once heated saute the onions, celery, and carrots until translucent.
