🏈 Week 6 of Game Day Bites: Cheesesteak Quesadillas | I should call this a New York Cheesesteak after the nygiants win last night!!
Anyway… these cheesesteak quesadillas slap! They’re crispy on the outside, cheesy on the inside, and loaded with so much flavor you’ll be making them all day long!
1lb shaved ribeye or strip slices (I used snakeriverfarms strip slices)
1 small onion, diced
3/4 cup cherry peppers
8oz provolone cheese
Butter
EVOO
Salt & Pepper
Tortillas
Melt the butter in a sauce pan over medium heat, and drizzle with olive oil. Add the onion and sprinkle with a pinch of salt. Cook for 15 to 20 minutes, stirring occasionally, until the onions are golden brown and slightly caramelized. Remove and set aside.
In the same skillet, increase the heat to medium-high and add the steak and season with salt and pepper. Cook for 3-4 minutes (just until browned), cutting the steak up and mixing it around.
