Ingredients:
- 1 fig
- 1/2 oz. lemon juice
- 1/2 oz. rosemary simple syrup
- 2 oz. gin
- top with tonic water
- garnish with a rosemary sprig and half a fig
Rosemary Simple Syrup:
1. Bring equal parts water and granulated sugar to a slight boil and add 1 or 2 rosemary sprigs.
2. Continuously stir, allowing the sugar to dissolve and the rosemary to infuse.
3. Once combined and simple syrup is at a slight boil, remove from heat and let simple syrup sit for 5 minutes.
4. Give this a stir and you’re ready to use!
5. Allow your simple syrup to completely cool before straining and storing in the fridge. Simple syrup will last 5-7 days.
