And don’t be afraid to add them to a savory salad! It’s a burst of sweetness that is hard to beat!
This salad is anchored with barley but tbh, I intended to use pearl couscous until I realized that my daughter went ‘shopping’ in my pantry the last time she came home and so I had to go to plan B… which was a terrific plan. Any grain, rice or small pasta will work beautifully!
Barley. Arugula. Cherries (pitted and halved). Toasted almonds. Cucumber. Mandarin oranges. Chick peas. Scallions. Mint. Pomegranate vinaigrette.

Pomegranate Dressing:
Juice of one lemon
Zest of one lemon
1/2 cup pomegranate juice
1 tbls honey
1 tbls dijon mustard
½ tsp salt
¼ tsp black pepper
1/2 cup extra virgin olive oil
Combine all in a jar and shake to combine.
