Here is a quick and easy weeknight meal idea!
I picked up this package of raviolis from Trader Joe’s and made simple seasonal sauce with what I had in the fridge.
I diced up one zucchini and one shallot and sautéed in some olive oil until they started to get soft. Add a container of halved grapes tomatoes and 2 cloves of chopped garlic and let cook down for about 3-4 minutes. Season with salt, pepper and some chili flakes. Add 1/3 cup white wine (use broth if you don’t want to add wine) the juice and zest of one lemon and 1/2 cup of the pasta cooking water. Let cook down and reduce by half. Add the cooked ravioli and tear some fresh basil into the pan, toss with the sauce and let cook together for just a minute. Remove from heat and sprinkle with Parmesan. I added some fresh mozzarella balls that I had halved and the heat of the pasta begins to soften them as well. Crack some extra pepper on top and drizzle with some good olive oil.
