Muffin much going on here . I had 2 black bananas that desperately needed to be put to use and a couple of zucchini that I had no idea what to do with. Enter this recipe stage left and we have a delicious solution! ....btw, No, you cannot taste the zucchini. Yes, it adds a wonderful moistness to the muffins! . . . Banana Zucchini Chocolate Chip Muffins . . 1 3/4 cup all-purpose flour 1/3 cup brown sugar 1/3 cup sugar 1 tsp baking soda 2 tsp baking powder 1/2 tsp salt 1/3 cup melted butter 1 tsp vanilla 2 ripe bananas mashed 2 medium zucchini grated (about 2 cups) that have been squeezed of excess water 2 beaten eggs 2 tbls buttermilk (you can use any milk) 1 cup chocolate chips Preheat oven to 350F. Line a cupcake tin with paper liners. Mash the bananas and combine with zucchini, set aside. In a medium bowl, add the flour, sugar, soda, baking powder and salt and stir. Add the butter, milk, eggs, vanilla, bananas and zucchini, and mix well. Being very careful not to over mix...
