I saw this one casserole dish dumpling dinner on allrecipes and knew I had to make it. Not only does it have all of my favorite flavors in it, but I had everything I needed already in the house.

Simple and so delicious it only took 10 minutes to assemble before I baked it. Dinner was on the table in half an hour. What’s not to love?!

2 tsp minced fresh garlic
1 tsp minced fresh ginger
3 tbls soy sauce
1 tbls rice vinegar
2 tsp toasted sesame oil
2 tbls red curry paste
1 cup full-fat coconut milk
1/2 cup water
5 cups chopped bok choy
10oz sliced shitakes (or any mushrooms)
20 frozen dumplings or potstickers
3 tbls chopped cilantro
1/4 cup thinly sliced green onion
2 tsp toasted sesame seeds
chili crunch oil
