Bourbon-Braised Beef Short Ribs
Ingredients:
- 3–4 lbs bone-in beef short ribs
- Salt & pepper to taste
- 2 tbsp oil
- 1 large onion, sliced
- 3 carrots, peeled and cut into chunks
- 4 garlic cloves, smashed
- 1 tbsp tomato paste
- 3/4 cup bourbon
- 2 cups chicken broth (plus more if needed)
- 1 tbsp Worcestershire sauce
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 bay leaves
Directions:
1. Preheat oven to 325°F. Season short ribs well with salt and pepper.
2. Heat oil in your Dutch oven over medium-high. Brown the short ribs on all sides (about 3–4 minutes per side). Set aside.
3. In the same pot, add onion, carrots, and garlic. Cook for 5–6 minutes until slightly caramelized. Stir in the tomato paste and cook 1–2 minutes.
