It’s Monday, which means it’s time to share another easy meal prepped lunch you can enjoy all week long. This week, I was inspired by munchinwithmaddie_ who recently shared a southwestern chicken salad that I knew I needed in my life.
I’ll be enjoying this in wraps or with tortilla chips all week long. 💃🏻
For the recipe:
▢ ½ cup Greek yogurt
▢ ¼ cup sour cream
▢ 2 tsp Mexican spice blend
▢ 1 medium lime, juiced
▢ 1 rotisserie chicken, meat pulled
▢ 1 can of black beans, drained and rinsed
▢ 2 scallions, thinly sliced
▢ 1 ripe avocado, cubed
▢ 1 jar roasted peppers, chopped
▢ 1 ear of grilled corn, kernels cut off the cob
▢ 1 Tbsp spicy salsa
▢ Arugula
▢ Large tortilla
1. MAKE THE DRESSING. Mix together Greek yogurt, sour cream, fresh lime juice, and spices.
2. Add chicken, black beans, and scallions, then stir well. Add remaining salad ingredients, stir until evenly coated, then taste and adjust seasoning. Enjoy with tortilla chips or add to sandwiches and wraps. I like a pinch ...
