I am very much a “keep the protein simple, then top it with a sauce” kinda gal. I do this with oven-roasted salmon and salsa verde, with pan-seared or grilled steak and chimichurri, and today I’m doing it with juicy grilled chicken topped with cool, refreshing, sliiiightly spicy pico de gallo.
I realize that pico isn’t a sauce per se, but it’s a condiment and it’s pretty damn efficient at jazzing up the flavors of ordinary grilled chicken.
Make it a complete meal with cilantro-lime rice, black beans, charred corn, and a damn good margarita (Cointreau always!).
