IMMUNITY CHICKEN SOUP 🍲
My take on classic chicken noodle, but let’s make it nutrient-dense with tons of veggies & immune-boosting spices. I’ve made this recipe more times than anything else this fall & for good reason!! 👉🏻 Save & send it to a friend who needs this in their life.
Ingredients (serves 6-8):
1 small onion, diced
2 large carrots, chopped
1 green bell pepper, chopped
2 garlic cloves, grated
1” fresh ginger, peeled & grated
1 tsp of each: cumin, turmeric, paprika, salt & pepper
1 tbsp tomato paste
15oz can crushed tomatoes
6 cups chicken broth, low sodium
1/2 c dry quinoa
1 c full fat coconut milk, canned
2 c shredded kale
2 chicken breasts, cooked & shredded - I use leftovers or rotisserie!
1. Heat 2 tbsp olive oil in a large pot over medium heat. Add onion, carrots, pepper, cook 2-3 minutes until slightly softened. Add all spices with ginger & garlic. Sauté for 1 minute until fragrant.
