Ingredients
• 1 medium acorn squash, halved and seeds removed
• 2 tbsp olive oil
• Salt and pepper, to taste
• 2 tbsp butter
• 1 small onion, diced
• 3 cups chopped kale (stems removed)
• 2 cloves garlic, minced
• ½ cup heavy cream
• ⅛ tsp ground nutmeg
• Pinch of chili flakes (optional, to taste)
• 3 oz creamy goat cheese
• 1 tsp lemon zest
• 1 tsp lemon juice
• 2 tbsp grated Parmesan
Instructions
Preheat oven to 400°F . Drizzle acorn squash halves with olive oil and season with salt and pepper. Place cut side down on a parchment-lined baking sheet and roast 30–35 minutes, until tender and lightly caramelized.
