hearty and high protein but not super heavy 🍁 comes together in ONE pot and makes the best leftovers! Ingredients: 1 tbsp olive oil 1 red onion, finely chopped 1½ lb ground turkey 1 packet taco seasoning Kosher salt & black pepper 4 cloves garlic, minced 2 tbsp tomato paste 1 (28 oz) can chopped tomatoes (I love fire-roasted but regular works too!) 1 (15 oz) can black beans, rinsed & drained 1 (15 oz) can kidney beans, rinsed & drained 1½ cups chicken or beef broth Toppings: shredded cheese (I use goat’s milk cheddar), green onions, sour cream or yogurt Optional: roasted butternut squash or sweet potato (only if you already have it prepped!) Instructions: Heat olive oil in a large pot over medium-high. Sauté onion until softened (about 4 min). Add ground turkey and cook until golden — no need to fully cook through yet.
