slowing down with my fall night routine 🍂 Chewy Brown Butter Pumpkin Chocolate Chip Cookies (Makes ~2 Dozen) Ingredients 1 cup (2 sticks) butter, browned 6 tbsp granulated sugar ¾ cup packed brown sugar 3 egg yolks 4 tsp vanilla extract ⅔ cup pumpkin purée (drained to ~6 tbsp) 2 cups all-purpose flour ½ tsp salt 1 tsp baking soda 1 tsp cinnamon 2 tsp pumpkin pie spice 1 cup chocolate chips Directions 1. Melt butter over medium heat until golden and nutty. 2. Preheat oven to 350°F. 3. Drain pumpkin purée with paper towels until almost dry (~6 tbsp). 4. Whisk together flour, salt, baking soda, cinnamon, and pumpkin pie spice. 5. Beat sugars into cooled butter until smooth. 6. Add egg yolks, vanilla, and pumpkin; mix until combined. 7. Fold in dry ingredients, then chocolate chips. Cover and chill dough 45 minutes. 8. Scoop onto baking sheets and bake 12–13 minutes, until edges are set. 9.
