Garlic Sesame Chicken Zucchini Bowls Makes 4 servings 1 1/2 cups jasmine rice, cooked 3 zucchini, diced 1 tb olive oil 1/3 cup maple syrup 1/3 cup low sodium soy sauce or tamari 3 tb tomato paste 3 tb rice vinegar 2 tb toasted sesame oil 6 garlic cloves, mashed 1/2 tsp red pepper flakes 1 lb ground chicken (I like thigh meat) 1 tsp olive oil 1 bunch green onions, finely chopped (about 8) 1 tb toasted sesame seeds Prepare rice according to package instructions and set aside.
