The problem with most pad thai recipes is that I always feel like they need more sauce! Like why are the noodles so dry? Well not this recipe—the sauce soaks up into the rice noodles so you get that delicious sauce in every bite!
Makes 4-6 servings
PAD THAI
14 oz rice noodles (stir fry or pad thai noodles)
1 tb olive oil
1 lb boneless skinless chicken thighs, cut into bite size pieces
2 tb low sodium soy sauce
1 cup bean sprouts
1 red bell pepper, seed removed and sliced thin
1 cup shredded carrots
3 cloves garlic, mashed
2 eggs
1 cup green onions, sliced thin (this is ~1 bunch)
½ cup cilantro
1 lime, juiced
1/2 tsp red pepper flakes
SAUCE
1/2 cup low sodium soy sauce or tamari
2 tb toasted sesame oil
3 tb fish sauce
1/3 cup coconut sugar
3 tb rice vinegar
1/4 cup creamy natural peanut butter
1 tsp ground ginger
