@thefoodie_diaries make this, I knew I had to try it too! I also learned that this is inspired by a popular dish called Kerak telor, a traditional Indonesian street food! It’s a definite must try and you can fill it with whatever you’d like!
1 tsp chili oil (I used momofuku but you can also use Trader Joe’s or make my recipe (on my blog)
1/2 cup cooked rice
2 eggs, whisked
1/4 cup parmesan cheese, grated
1 green onion, sliced thin
Serve with: salsa or hot sauce
In a small non-stick skillet, heat the chili oil over medium heat. Add the cooked rice. Spread the rice in an even layer, gently pressing down. Let it cook for about 3-4 minutes so that the bottom starts to develop a crisp crust. Pour in the whisked eggs. Add the green onion and cheese. Cover and let the eggs cook through.
