They are naturally gluten-free and unlike rice noodles which get clumpy after a few minutes, these noodles retain their shape and texture and soak up the sauce. Iām pairing the noodles with a healthier version of Mongolian Beef and omgeeee, this meal is a MUST for any night of the week!
Makes 4 servings
1 lb. ground beef (I use 90/10 to keep it lean)
4 cloves garlic, mashed
1/4 cup coconut sugar (or brown sugar)
1/4 cup beef broth
1/4 cup low sodium soy sauce (or coconut aminos)
1/4 cup hoisin sauce
1 tsp ground ginger
1/2 tsp ground black pepper
1/4 tsp red pepper flakes
10 oz linguine
1 tb arrowroot or cornstarch
2 tb water
Noodles:
3, 3.5-oz packages of korean style glass noodles
Garnish:
Chopped green onion
