1 lb lean ground beef (or turkey/chicken)
2 tb taco seasoning (I used

1 jalapeño, seeded & finely chopped
3 cloves garlic, mashed
1 15oz jar red enchilada sauce (I used
@sietefoods)
2 1/2 cups water
1 cup rice (I used long grain)
1/2 cup italian parsley, chopped
1 1/2 cups shredded mexican cheese
2 1/2 cups tortilla chips (sturdy ones!)
1 avocado, diced
