Makes 4 servings
INGREDIENTS
1.5 lbs of boneless skinless chicken breast, cut into small cubes
1/2 tsp salt
1/2 tsp ground black pepper
4 tablespoons plant based butter (or regular), divided
12 cloves garlic, smashed
1 cup yellow onion, finely diced
1/2 cup chicken broth
1 lemon, zested and juiced
1 teaspoon fresh thyme
15 oz. can of full fat coconut milk, unsweetened (or heavy cream)
3 tb arrowroot or cornstarch
1/2 cup parsley, chopped
Serving suggestion: with veggies on the side or over rice
