@kalejunkie for more! KALE SALAD WITH PARMESAN & LEMON BASIL DRESSING inspired by a delicious chopped kale salad I had a few weeks ago when I was in NYC!!! I knew the moment I took a bite, I had to recreate it for you, only my version is even better :) This is a great salad to add to your meal prep rotation because as you know, kale does not get soggy. And if you don’t love kale, I will tell you that the SECRET to loving it is chopping the kale thinly and massaging it so it softens.

2 bunches curly kale, stems removed and chopped very finely
1 cup panko breadcrumbs, toasted (or gluten-free breadcrumbs)
