@kalejunkie for more! 3-INGREDIENT CRISPY SALT & VINEGAR SMASHED POTATOES! If you love s&v chips, you will love these smashed potatoes even more! They are baked in the oven, get super crispy and then topped with lots of salt and vinegar. I always plan to make a big batch to serve with dinner, but the reality is, I eat them all before anyone else gets to—SELFISH, I KNOW!!!!! You can enjoy them alone but I love to dip them in either ketchup or the sauce below (so so good!). Tag me when you make them so I can repost your creations!
Makes 6-8 servings
2 lbs mini potatoes (I like baby yukon gold)
6 tb olive oil
6 tb malt vinegar (or 3 tb apple cider vinegar)
Salt & pepper to taste
Fresh chives to garnish, chopped
Optional dipping sauce
1/2 cup sour cream
1-2 tb gluten free worcestershire sauce
