You can also customize this recipe and add any veggies you have in your fridge, making it the perfect excuse to use up what you have on hand. Mushrooms and bell peppers would be an excellent addition. You can enjoy this for breakfast, lunch or any time of day. It’s protein packed, kid-friendly, and pretty much fool proof!
Makes 8 servings
8 eggs (I use

1/2 cup milk or non-dairy milk of choice
1 cup marinara sauce (

1 tsp oregano
1/2 tsp ground black pepper
1 tb olive oil or avocado oil
1 medium yellow onion, finely diced
3 cloves garlic, mashed
1 1/2 cups spinach (approx. 2 handfuls)
1/2-3/4 cup shredded mozzarella cheese
12-14 slices pepperoni
