By now, I think it’s pretty clear I love salmon, so today I tried something different and made this DELICIOUS citrus salmon and it turned out amazing. The salmon is first coated in fresh herbs and spices — lots of garlic, onion and dill and it is cooked on top of orange and lemon slices and topped with pomegranate. It is also GORGEOUS to serve to guests!
Makes 4 servings (or in my case, 2)
1 lb salmon, bones removed
1 orange, sliced thin
1 lemon, sliced thin
3 tb olive oil
1/2 cup fresh dill, chopped (divided)
1 tsp garlic powder
1 tsp onion powder
1 tsp hot paprika
1 tb dried parsley
1/2 tsp kosher salt
Slice lemon and orange thin. Line a baking sheet with parchment paper and set aside. Add 1/2 of the lemon and orange slices. Next, lay the salmon on top. Make the sauce mixture, mixing together the olive oil, 1/2 of the dill, garlic powder, onion powder, paprika, parsley and salt. Rub the mixture on top of the salmon. Top ...
