Every year I share the pumpkin version because T’IS THE SEASON and they are insane. They are soft and chewy, pumpkin-y and scream fall. Your life might be changed, who knows? Makes 12 cookies
1 cup almond flour
3/4 cup tahini (the more liquidy the tahini, the better - I used
@soomfoods)
3 tb pumpkin puree
1/2 cup maple syrup
1 egg (or flax egg if vegan)
2 tbsp pumpkin pie spice
1 tsp baking soda
1 heaping cup of chocolate chips
sea salt flakes for topping
Preheat oven to 350. Add all ingredients to a bowl and mix well. Scoop dough and form 12 cookies. Bake for 10-11 minutes. They will be SOFT. Let them settle for a few minutes before eating. The key with these ...
