BLTE PASTA SALAD (Bacon, Lettuce, Tomato, & Egg) with Champagne Vinaigrette, one of the best salads I’ve ever made and if you’ve been following along for a while, you know I’ve made MANY over the years. So get on it—it’s also a great one for Labor Day and a total crowd pleaser! You can easily make this one gluten-free by using gf pasta. I like rotini for this salad, but bowties would be fun too!
Makes 4 servings
1 16 oz box rotini pasta
6 hard-boiled eggs, chopped
6 slices cooked bacon, chopped
1 cup cherry tomatoes, halved
2 cups romaine lettuce, chopped
1 bunch chives, finely chopped
Champagne vinaigrette
1/2 cup olive oil
3 tb champagne vinegar (or red wine vinegar)
1 tb dijon mustard
2-3 cloves garlic
1 tsp kosher salt
1/2 tsp ground black pepper
