@kalejunkie for more recipes! WATERMELON PEACH PANZANELLA SALAD with balsamic vinaigrette and it happens to be the best salad I’ve made all summer—I said what I said! I picked up all of the ingredients from
@sprouts and it came together in under 30 minutes for an easy summer lunch or dinner. It’s also a great way to use up stale bread laying around in your kitchen because you can make the most delish croutons! If you make this salad for meal prep, store the salad in one container and the croutons in another container and then add the croutons when ready to eat. SO SO SO GOOD!
3 cups stale bread, cubed (I used the italian rustic loaf from
@sprouts)
2 tsp olive oil
1 tsp za’atar (optional)
Salt & pepper
2 persian cucumbers, chopped
3 cups cubed seedless watermelon
2 peaches, sliced
1/4 cup fresh basil, chopped
1/2 red onion, sliced
Burrata (optional, but not 😉)
Balsamic Vinaigrette Dressing
1/4 cup olive oil
3 tb white balsamic vinegar
1 tb honey
2 tsp dijo...
