CUCUMBER APRICOT COUSCOUS SALAD, one of my all time favorite salad recipes! EVER. EVER EVER! I could eat this salad every day and be totally happy. The Israeli couscous gives it major comfort food vibes, but at the same time, it’s light and refreshing thanks to the cucumbers, apricots and mint. It’s all tossed in a cumin vinaigrette that is drinkable. I cannot wait for you to make this and report back. And ps, if I ever come out with a second cookbook, this recipe is going in there :)
Makes 4 meal salads or 8 side salads
1 cup Israeli couscous (pearl couscous)
2 tb olive oil
3 Persian cucumbers, chopped
1/2 red onion, finely diced
