Let’s make TYLER FLORENCE’S POTATO SALAD, ie, the only potato salad I love and that doesn’t gross me out haha! This one is a WINNER.
@tylerflorence adds both pickles and pickle juice to his and that’s the game changer for me. You can mash the potatoes or leave them intact like I did. He mashes them, I prefer them halved, do you. You can also adjust the seasonings and amounts of everything as needed, but whatever you do, don’t skip the pickles!
Makes 8 servings
2 lbs small Yukon gold potatoes
2 eggs
1/2 small red onion, chopped
1/4 cup italian parsley, chopped
1/2 bunch dill, chopped
1/2 bunch scallions, sliced
1/4 cup finely chopped dill pickles with 1/4 cup juice, about 2 pickles
2 cups mayonnaise
1/4 cup dijon mustard
2 tablespoons drained capers
1/2 lemon, juiced
Kosher salt
Freshly ground black pepper
