@kalejunkie for more recipes! MISO CARROT GINGER DRESSING from page 213 of my cookbook, LOVE TO EAT! 🥕 I grew up loving a similar dressing from Benihana, but this one is next level so good!
This recipes makes 1 1/2 cups of dressing, so you can use it all week long in a variety of ways - see my last Reel, you can use it on the Viral Cucumber Sweet Pepper Salad as an idea!
1/2 cup white miso
1/4 cup avocado oil
1/2 cup grated carrots, packed (though I always add more!)
2 tb grated ginger
2 tb rice vinegar
2 tb toasted sesame oil
2 tsp maple syrup or honey
1/4 cup water
1/2 tsp salt, 1/2 tsp black pepper
3 tb sesame seeds (optional)
Blend all ingredients except the sesame seeds in a blender until desired consistency is reached. I like mine super smooth, but feel free to leave some texture. Taste and adjust as needed. Stir in sesame seeds, if using. Transfer to a jar, cover and store in the fridge for 1 week. ENJOY!
