Makes 8 servings
1 lb loaf challah or brioche
6 eggs
2 cups non-dairy milk of choice
3/4 cup coconut sugar
2 tsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
1 tb molasses
Topping:
3 tb sugar
1 tsp cinnamon
Garnish: fresh berries, maple syrup
Cut challah or brioche into 2 inch squares. Add the pieces to a greased 9x13 baking dish. In a large bowl, whisk together eggs, milk, coconut sugar, vanilla, cinnamon, nutmeg and molasses. Make sure to whisk well so there are no clumps. Pour mixture over the challah/bread and gently press the pieces down to make sure each piece soaks up the liquid.
