Forget that bad memory, make them at home, my way, and you will fall in love with scrambled eggs all over again, guaranteed!⁣ ⁣ 1. Whisk the eggs well. Getting a good amount of air into into the mix will produce lighter, fluffier eggs, and be sure to whisk until there are no clumps!⁣ 2. Use a non-stick pan. This will be tremendously helpful.⁣ 3. Use a flexible spatula so that you have full motion to move the eggs in the pan.⁣ 4. Only use medium-low heat, and err on the side of LOWER rather than higher. High heat will make for dryer, tougher proteins and lower heat will make for a super soft custardy scramble.⁣ 5.
