PASTA WITH CHICKPEAS, *my* spin on Pasta e Ceci, which happens to be a VERY DELICIOUS, budget-friendly stew that you can make in one pot with items you probably already have in your pantry! This entire meal cost about $10-12 and fed a family of four. It’s hearty and so comforting this winter season and all year long!
Pasta with Chickpeas - 4 servings
1/4 cup extra virgin olive oil
4 cloves garlic, peeled and smashed
1 small red onion, diced
1 6oz can tomato paste (or 1/4 cup)
1 tsp salt
1 15 oz can chickpeas, drained and rinsed well
1 cup small shape pasta (I am using elbows)
3 cups chicken broth or broth of choice
1 bay leaf
Crushed red pepper flakes and freshly grated parmesan cheese, for serving
