@kalejunkie for more recipes! EASY DOUBLE CHOCOLATE BISCOTTI that you need to make this holiday season, and it happens to be gluten-free and refined sugar-free! I love to make this and dip it in milk, coffee or hot chocolate.
Makes 10-12 biscotti
1 cup almond flour
1/3 cup + 3 tb oat flour
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp sea salt
1 egg
1/2 cup coconut sugar
3 tb non-dairy milk of choice
1/4 cup coconut oil, melted
2 tsp vanilla extract
3/4 cup dairy-free dark chocolate chips
1/2 cup dairy-free white chocolate chips
In a bowl, mix together the almond flour, oat flour, cocoa powder, baking powder, and salt. In another bowl, whisk together the egg, coconut sugar, milk and coconut oil. Pour wet into the dry and mix until a thick dough forms. Freeze for 20-30 minutes until the dough is hard. Preheat oven to 350 and line a baking sheet with parchment paper.
