Year after year, I make these frosted cranberries because they are the perfect combination of sweet and tangy, and you can make them sugar-free using monk fruit. I keep them in the fridge to snack on during the holidays, and they also make a great addition to a charcuterie board. And…they make a great DIY food gift!
SUGAR-FREE FROSTED CRANBERRIES
12 oz fresh cranberries
3/4 cup water
3/4 cup sugar + 1/4 cup for rolling in (or monk fruit, I used
@lakanto granulated monk fruit)
In a pan, add the water and the sugar to a pan. Whisk until dissolved. Then add the cranberries and cook over medium low heat for just 3-4 minutes, DO NOT overcook or the cranberries will get soft and mushy. Remove from heat and use a slotted spoon to transfer to a lined baking sheet. Let air dry for about 30 minutes. Then toss in the sugar. Coat well, so they are no longer sticky. Transfer the frosted...
