It’s my birthday 🥳🎂🎊! And today we made my LIFE CHANGING PUMPKIN CHOCOLATE CHIP TAHINI COOKIES, and if you haven’t made them yet, I will go out on a limb and say that your life will be changed too. The best part? They are SO EASY and you can make many substitutes to the OG recipe and still have a perfect cookie!
Makes 12 cookies
1 1/4 cups almond flour
3/4 cup tahini
1/4 cup pumpkin puree
1/2 cup maple syrup
1 egg (or flax egg if vegan)
2 tbsp pumpkin pie spice
1 tsp baking soda
1 heaping cup of chocolate chips
sea salt flakes for topping
Preheat oven to 350. Add all ingredients to a bowl and mix well. Scoop dough and form 12 cookies. Bake for 10-11 minutes. They will be SOFT. Let them settle for a few minutes before eating. The key with these cookies is to slightly undercook them, so that they are nice and crispy on the outside and SUPER CHEWY on the inside. Sprinkle sea salt flakes on top.
