HOMEMADE EGG-FREE MAYO! šŸ˜ Follow @kalejunkie for more recipes and tips. As you all know now, I used to hate mayo (like worst condiment ever status)—until I started making it myself and discovered that the difference between store-bought and homemade is a completely different experience. Many of you asked for an egg-free version to the recipe I shared last week, so here it is—you need the liquid in the can of chickpeas, which is called aquafaba! ⁣ ⁣ ⁣ Ingredients:⁣ 1/2 cup aquafaba⁣ 1/4 tsp dijon mustard⁣ 2 tb lemon juice⁣ Pinch salt⁣ 1 cup avocado oil⁣ ⁣ Instructions:⁣ Open the can of chickpeas and separate the chickpeas from the liquid—keep the liquid! In the cup of your immersion blender, add all of the ingredients. Let it sit for a few minutes to settle. Then take the immersion blender and place it inside the container (firmly on the bottom — THIS IS VERY IMPORTANT). Turn the blender on and DO NOT move it for 30-40 seconds.
