As you all know now, I used to hate mayo (like worst condiment ever status)āuntil I started making it myself and discovered that the difference between store-bought and homemade is a completely different experience. Many of you asked for an egg-free version to the recipe I shared last week, so here it isāyou need the liquid in the can of chickpeas, which is called aquafaba! ā£

Ingredients:ā£
1/2 cup aquafabaā£
1/4 tsp dijon mustardā£
2 tb lemon juiceā£
Pinch saltā£
1 cup avocado oilā£

Open the can of chickpeas and separate the chickpeas from the liquidākeep the liquid! In the cup of your immersion blender, add all of the ingredients. Let it sit for a few minutes to settle. Then take the immersion blender and place it inside the container (firmly on the bottom ā THIS IS VERY IMPORTANT). Turn the blender on and DO NOT move it for 30-40 seconds.
