LEMON PIE BAKED OATS š that taste like the center of a lemon meringue pie, but in baked oats form. Lifeāor just breakfast perhapsāneeded a little upgrade IMO šš»āāļø. The secret to that ooey, gooey center is lemon curd, an ingredient thatās seasonal here (spring/summer) and I buy mine at Trader Joeās, but check your grocery stores, it would be located in the section with the jams. ā£

1/2 cup rolled oatsā£
1/2 bananaā£
1 eggā£
1 tb maple syrupā£
1 tb cashew butter (or almond butter)ā£
1/4 tsp baking powderā£
1/4 tsp cinnamonā£
1 tb lemon curd (I used
@traderjoes)ā£
1 tb lemon zestā£

Preheat oven to 350F. Add all ingredients except for the lemon curd & zest into the blender and blend until combined (should be a somewhat liquidy batter). Pour half of the batter into a greased mug or ramekin (8-12 oz size). Add lemon curd in the center and then pour remaining batter on top. Add lemon zest on top. Bake for 25 minutes. Let cool, then dig into that gooey, lemony center. Enjoy!ā£
